Instructions
Preparing The Tea Base
Boil Water: Begin by boiling your filtered water. Once boiling, remove it from heat and let it cool for a minute.
Steep The Tea: Add the green tea bags or loose-leaf tea to the hot water and let them steep for about 10 minutes to extract their flavor.
Dissolve Honey: Remove the tea bags and dissolve the cup of honey into the warm tea. Honey not only sweetens the tea but also feeds the Jun SCOBY during fermentation.
Cool Down: Allow the tea to cool to room temperature (below 68°F or 20°C). Hot temperatures can harm the SCOBY.
Fermenting The Tea
SCOBY Introduction: In your clean glass jar, combine the cooled tea with the Jun SCOBY and starter tea. The starter tea helps to acidify the environment, making it safe for fermentation.
Cover And Store: Cover the jar with a breathable cloth and secure it with a rubber band. Place the jar in a warm, dark place (68-78°F or 20-25°C) for 3-7 days. Fermentation time can vary based on temperature and your taste preference.
Bottling And Second Fermentation
Prepare For Bottling: Once the first fermentation is to your liking (taste test with a non-metal spoon), prepare your flavoring ingredients.
Flavoring: Add your chosen flavors into the fermentation bottles.
Bottle The Tea: Pour the fermented tea into the bottles, leaving about an inch of headspace. Seal the bottles tightly.
Second Fermentation: Leave the bottles at room temperature for 2-3 days for carbonation, then refrigerate to stop the fermentation process.
